3 lbs chicken breasts
1 Tbs minced garlic
6 oz canned coconut milk
1/4 cup lime juice
1/2 Tbs ground ginger (or ginger paste)
1/4 cup fresh chopped cilantro and/or parsley
Optional: 1/2 teaspoon red chili flakes
Place in slow cooker and cook for up to 4 hours on high and 7-8 hours on low.
