Oyakodon

 4 chicken thighs and/or tofu, cut into bite-sized pieces

2/3 scallion

1 1/2 cup Dashi

1/2 cup Mirin

3/8 cup (6 Tab.) Soy Sauce

8 eggs

@4 servings rice

4 egg yolks, optional


Put chicken thighs, scallions, Dashi, Mirin and Soy Sauce in a pan and cook until meat is cooked.

Scramble eggs in a bowl and add @2/3 to pan. Let sit until it becomes firm, like a cake. Add last third on top and cook until desired consistency. Serve on rice. Add egg yolks on top, if desired.
